A Delicious Camping Dinner

I apologize for not getting around to everyone's blog since the New Year.  We went on our first camping trip of the season this past weekend; we left early New Year's Day and returned late Sunday.

It was a great trip and I will tell you all about it later this week but since it is Tasty Tuesday, I thought I could tell you about some of the delicious food we had in camp!  I made sure Ma brought along plenty of food and treats for me including some Jones Natural Chews Beef Liver Taffy and my Bravo Homestyle Complete Beef Dinner.  Yum!


However, I think the beef that topped it all was the Prime Rib Roast that Ma made Saturday night in her Dutch oven in the campfire!  She got a new, bigger Dutch oven from Daddy-dog for Christmas just so she could try the recipe.

She had the ribs removed and tied back on by the butcher so the roast would stand in the Dutch oven.  She pre-seasoned it before freezing it for the camping trip.  It defrosted just in time to cook on Saturday, oddly enough surrounded by rock salt in the Dutch oven.  The rock salt under the roast got a little burnt during cooking but it didn't affect the flavor of the meat one bit.


It took as long to cook in the Dutch oven as it would in a regular oven; about 2.5 - 3 hours.  Daddy-dog had put two thermometers in the roast that send the meat temperature to his iPhone app via Bluetooth so we would know when the meat was ready.  Once the temperature was right, Ma took it out to rest before carving.  I was sure to stay close to that roast to guard it from critters.


Ma served the roast with Rosemary Sweet Potatoes, steamed Green Beans and Pillsbury Crescent Rolls...all cooked over the campfire.  Everyone enjoyed the meal including the family in the neighboring campsite (Ma thought it would be nice to share the leftovers)!

  4. I've never had anything cooked in a campfire (well, that's not entirely true. I've had marshmallows ;-) ) I love the outdoors but I do not love camping...go figure.

  6. OMD OZ that Prime Rib looks OUTTA this WORLD Fangtastic... it is BEAUTIFUL to Look at... so it must have been FABULOUS to Eat... What a GRAND MENU... and all cookered over the open fire... Your MA gets the 5 GOLDEN STARS fur THAT meal. What a Way to start your new year... TASTEFULLY.

  9. Oz that looks delicious, you mom has golden paws! We never did that and I can't imagine to go camping in January... probably you have much better weather than we currently have. We only rosted sausage once on a campfire, but someone with clumsy paws failed and they landed in the middle of that fire... at least I've got a good smell :o)

  14. Wow, we have never had prime rib cooked like that, but it looks awesome! (and now I'm hungry). Yay for the first camping trip of the year! That sounds especially nice since we're in a deep freeze up here!

  16. We know our mom will never make this (she doesn't eat meat) but we think it looks delish. We never used a dutch oven before but we will talk to our meat eating dad about it. That was sweet of your mom to invite the others!
